Manga will always have more details than anime (with a couple notable exceptions). This is the case today and was the case 40 years ago, and will be the case 40 years from now. It's just a difference in the priorities and production of each medium. There are reasons to be critical of the Baki anime but this really isn't one of them.
Imo the anime did Emi's death better. Discussion! It felt like the anime made it more emotional and sadder, which in turn made it feel a lot more unique for a series like Baki. The manga was just another fight scene with Baki while carrying his dead mother on his back, and then he leaves her corpse under a bridge for some kids to find. The anime only got a little over a hundred episodes localized but the manga is still on track. Baki the Grappler started as a manga in 1991 and currently has 137 volumes.
Grappler Baki (グラップラー刃牙 Gurappurā Baki), or Baki the Grappler, is a manga series written and illustrated by Keisuke Itagaki. It was originally serialized in Weekly Shōnen Champion from 1991 to 1999, and later collected into 42 tankōbon volumes. It was followed by two sequel series: New Grappler Baki (Baki: In Search of Our Strongest Hero or New Grappler Baki), which was 62Tm.
